A fresh and easy summer salsa for chicken and white fish.
1 garlic clove
1/2 red chilli
10g fresh coriander
100g spring onion
1lime juice and zest
Chop the mango and cucumber into small dice.
Smash the peanuts.
Puree chilli, ginger and garlic together.
Finely slice the spring onions.
Chop the coriander and toss all ingredients together.
There you have it, a perfect mango and peanut salsa.
